Ingredients:
- 1 zucchini, cut into 1/2 inch cubes
- 1/2 lb. cherry tomatoes, halved
- 1 cup Skylake Ranch Pomegranate Marinade
- 16 oz. Penne Pasta, cooked
- 1/4 cup chopped Italian parsley
Directions:
Drizzle zucchini with olive oil and roast in a 400 degree oven for 15 minutes (or until soft). In a large bowl toss all ingredients together and serve warm or cold.
